A GREAT DEAL of Moray creativity has gone into a new product launched at the weekend during the Speyside Craft Brewery Festival in Forres.

A combination pork, whisky and beer have been combined to create the ‘Pickled Pig’ sausage – a tasty combination that beer lovers were first to try out on Saturday.

Jock Gibson, owner of Macbeth’s Butchers, and Seb Jones from the Speyside Craft Brewery are responsible for creating the delicacy, a first-time collaboration between the two Forres firms.

Jock said: “This is the first time we have collaborated in this way with another local business to create a culinary delight, but I think we have made something which is really special.  Seb’s beers have won oodles of awards and it really does add a smoky flavour to the pork – while maturing the beer in a whisky cask was a stroke of genius on Seb’s part and it tastes amazing.”

It is by no means the first time Jock has put his creativity to the test, having packed their award-winning pork sausage recipe with chocolate and chili to produce a ‘Valentine’s Day’ treat back in February.

“Creating these sausages is good fun and now that we have worked with Seb,” he said, adding: “I am sure we will be coming up with ideas to entice our customers to try something that little bit different.

“Long gone are the days where people simply want a pork sausage – people are excited to try new things and we are happy to oblige.”
